HACCP (Hazard Analysis Critical Control Points) is the method that identifies a venue's food-safety hazards, fixes the points where they are controlled (the CCPs), and proves through records that those points are held. In Europe, Regulation EC 852/2004 requires HACCP-based procedures of every food business.
The 7 principles sound academic; on the floor they come down to three habits — know where the risks are, check at the right points, and be able to prove it.
What could make a dish unsafe in YOUR venue: a broken cold chain, cross-contamination, an undeclared allergen.
